Florets Chocolate Rye Cookies Recipe

These rich, chewy chocolate rye cookies from our friends at Florets Bakery in Grey Lynn are the perfect way to celebrate a small win (or fuel a big one). They’re decadent, earthy, and just a little bit fancy—kind of like finally getting your pre-approval.

Ingredients

  • 510g dark chocolate

  • 65g butter

  • 96g rye flour

  • 1¼ tsp baking powder

  • ¾ tsp salt

  • 4 eggs

  • 333g brown sugar

  • 50g white sugar

  • 1 shot of espresso

Method

  1. Melt chocolate and butter together over a double boiler.

  2. In a separate bowl, whisk eggs until fluffy and pale.

  3. Slowly add the sugars and espresso to the eggs, whisking continuously.

  4. Whisk in the melted chocolate mixture.

  5. Sift in the rye flour, baking powder, and salt. Mix to combine.

  6. Roll dough into balls (about 55g each) and place on a lined oven tray.

  7. Sprinkle with sea salt.

  8. Bake at 180°C for 18 minutes.

  9. Makes around 20 cookies.
